Semiya Brinji

 

Ingredients for Semiya Brinji:

  1. Semiya (vermicelli)  – 500 gm
  2. Dalda – 25 ml
  3. Refined oil – 25 gm
  4. Mustard – 10 gm
  5. Ginger sliced to thin lengthy pieces – 25 gm
  6. Green chillies with end split – 25 gm
  7. Curry leaves – 3 stem
  8. Onion sliced – 100 gm
  9. Carrot sliced – 50 gm
  10. Capsicum sliced – 50 gm
  11. Cabbage sliced – 100 gm
  12. Coconut scrapped – 1
  13. Ghee – 25 milli
  14. Salt – as needed
  15. Sugar – 25 gm

How to prepare Semiya Brinji?

  1. Add vermicelli to water and half cook it.
  2. Heat oil and dalda together in a pan and splutter mustard seeds.
  3. Sauté ginger, green chillies, onion and curry leaves together.
  4. Add vegetables and sauté again.
  5. Add half of scrapped coconut and sugar. Stir well.
  6. Add vermicelli and salt. Stir well.
  7. Add ghee on the top along with remaining coconut.
