Scrambled Egg Curry
Ingredients for Scrambled Egg Curry:
1. Eggs – 2
2. Onion chopped – ½ cup
3. Tomato chopped – 1
4. Green chillies – 2 or 3
5. Curry leaves – As required
6. Chilli powder – ½ tsp
7. Garam masala – ½ tsp
8. Pepper powder – ½ tsp
9. Turmeric powder – ½ tsp
10. Coconut milk (1st extract) – 1 ¼ cup
11. Salt, Oil – As required
How to prepare Scrambled Egg Curry?
1. Heat oil in a pan and sauté onions, tomato, green chillies and curry leaves in this order.
2. When onions turn golden brown colour, add salt and masala powder.
3. Continue sauting till a thin layer of oil appears on its surface.
4. Beat the eggs and add to this gravy, and mix well.
5. When eggs are well cooked, add coconut milk.
6. Cook for 5 more minutes.
Note: If you want egg pieces in your curry, you can boil one egg, cut to pieces and add to this curry.
