Puli Saadam (Tamarind Rice)

 

Ingredients for Puli Saadam (Tamarind Rice):

1. Ponni Rice – 3 cups, cooked

2. Gingelly oil/coconut oil – ½ cup

3. Mustard – 1 small spoon

4. Red chillies – 4, chopped

    Green chillies – 6

    Onions – 1 small

5. Fenugreek powder – ½ small spoon

    Turmeric powder – ½ small spoon

    Salt – For taste

    Curry leaves – 1 stalk

6. Tamarind juice – ¾ cup, from 1 lemon sized tamarind

How to prepare Puli Saadam (Tamarind Rice)?

1. Heat oil and splutter mustard seeds.

2. Sauté ingredients no: 4.

3. Add ingredients no: 5 to it and mix well.

4. Add tamarind juice and allow the contents to fully absorb the water content.

5. Add cooked rice and salt to it, mix well and serve hot.

Ingredients for Puli Sadam (Tamarind Rice) Recipe 2:

1. Parboiled rice of small grains/Basmati/Ponni/Raw rice – ½ kg

2. Sesame oil – 150 gm

3. Asafoetida  – 1 piece

    Red chillies – 1

    Fenugreek seeds – ½ small spoon

4. Red chillies – 5, cut into pieces

    Mustard – 1 small spoon

5. Green chillies – 4, chopped as round pieces

6. Roasted Chana dal Gram (Pori Kadala/Pottu Kadala) – 3 small spoons

    Curry leaves – 2 stems

7. Tamarind – Lemon-sized

8. Salt and turmeric powder – As per required

9. Cashews – 20 gm, split into two

    Groundnut – 50 gm

10. Sesame seeds fried and roasted – 1 small spoon

How to prepare Puli Sadam (Tamarind Rice) Recipe 2?

1. Wash the rice and cook it adding sufficient water. Never overcook it.

2. Strain off excess water.

3. Extract juice from tamarind.

4. Roast cashews and groundnut.

5. Heat 1 small spoon of oil in a pan and fry ingredients no: 3.

6. When it cools, make a fine powder.

7. Heat an open pan and add a little oil.

8. Add broken chillies and mustard seeds and sauté the contents.

9. When mustard sputters, add chopped green chillies and sauté it.

10. Add dal and curry leaves and fry it well.

11. Add tamarind juice, followed by salt and turmeric powder.

12. When the contents thicken, add fried cashews and groundnut, and powdered contents.

13. Mix the contents, and put off the flame. It should resemble a chutney.

14. Add cooked rice, remaining oil and powdered sesame seeds.

15. Mix the contents very slowly. But make sure, rice should not be smashed or overcooked.

Note: Rice should not be overcooked. Also it should be completely cool while adding to tamarind mixture.

Puli Sadam – Recipe 3

Let me give you one more easy recipe of Puli Sadam. Cook 2 cups of basmati rice adding sufficient water. Never over cook rice. Strain excess water from rice. Soak lemon-sized tamarind in 1 cup water. heat 2 big spoons of oil in a pan and sputter 1 small spoon of mustard.  Add 5 chopped shloots, 2 cloves of chopped garlic, 7 red chillies broken into two and 1 stem curry leaves. Saute the ingredients and add 2 big spoons each of Bengal gram and black gram and saute again. Add tamarind juice and salt and boil the contents. When the contents thicken, add boiled rice and mix well. Put off the flame.
