Prawns – Mango Curry (Chemmeen-Mango Curry) Recipe 2
Ingredients for Prawns – Mango Curry (Chemmeen-Mango Curry):
1. Prawns – 30 nos:
2. Shallots chopped – 5
3. Garlic chopped – 5
4. Ginger chopped – 1 piece
5. Green chillies broken – 5
6. Coriander powder – 1 tsp
7. Chilli powder and turmeric powder – ½ tsp each
8. Fenugreek powder – ¼ tsp
9. Green mango chopped – 1.5 cups
10. Water – 2.5 cups
11. Curry leaves – 1 stalk
12. Coconut oil – 2 tsp
13. Salt – For taste
For gravy:
14. Coconut scrapped – ½ cup
15. Shallots – 1
16. Water – ¼ cup
For tempering:
17. Broken chillies – 2
18. Shallots chopped – 2
19. Mustard – ½ tsp
20. Curry leaves – A stalk
21. Fenugreek powder – ¼ tsp
22. Coconut oil – 2 tsp
How to prepare Prawns – Mango Curry (Chemmeen-Mango Curry)?
1. Wash prawns using water and a teaspoon lime juice.
2. Heat 2 tsp coconut oil in a pan.
3. Sauté onion, ginger, garlic and green chillies.
4. When it turns light golden brown, add coriander powder, chilli powder, turmeric powder and fenugreek powder.
5. Reduce the flame and sauté for 2 minutes.
6. Add 1.5 cups of water, green mangoes, prawns and salt.
7. Mix the contents well and bring to boil.
8. Cook in low flame for 10 minutes.
9. Make a fine paste of coconut and shallots adding water and prepare the gravy.
10. Add this gravy to cooked prawns.
11. Add ½ cup water also, and cook for 5 more minutes with closed lid.
12. Switch off the flame, and allow it to rest for 10 more minutes.
13. Heat 2 tsp coconut oil in a pan.
14. Sputter mustard seeds, and fry onions and red chillies till they turn golden brown.
15. Add fenugreek powder to it and switch off the flame.
16. Add curry leaves and mix it well.
17. Pour this oil on the top of the curry and serve.
