Prawns Dum Biryani (Chemmeen Dum Biryani)

Ingredients for Prawns Dum Biryani (Chemmeen Dum Biryani):

1. Prawns – 500 gm

2. Jeerakasala/Kaima rice – 3 cups

3. Water – As required

4. Chilli powder – 2 table spoons

5. Turmeric powder – 1+1 tablespoons

6. Coriander powder – 3+1/2 tablespoons

7. Garam masala – ½ + ½ tsp

8. Salt – For taste

9. Onion – 4, big

10. Green chillies – 10

11. Tomatoes – 4

12. Ginger & garlic crushed – 3 table spoons

13. Ghee, oil – As required

14. Curd – 2 big spoons

15. Lemon juice – 1 big spoon

16. Cloves, cinnamon, cardamom – 2 each

17. Cashews – 10

18. Onion – 1, sliced and fried along with cashews

How to prepare Prawns Dum Biryani (Chemmeen Dum Biryani)?

1. Marinate prawns using chilli powder, turmeric power and salt, and deep fry in hot oil.

2. In the remaining oil, sauté onions adding salt.

3. When it turns brown, add crushed ginger, garlic and green chillies.

4. Add tomatoes and chopped leaves and close the lid.

5. When it’s well cooked, add coriander powder, turmeric powder, garam masala and salt.

6. Mix the contents well and put off the flame.

7. Add curd, lemon juice and fried prawns, mix well and close the lid.

8. In another vessel, heat ghee and sputter cloves, cinnamon and cardamom.

9. Add salt and water and boil well.

10. When water boils, add rice and cook well.

11. Strain off excess water.

12. Heat ghee in a vessel and put prawn masala.

13. Spread rice on the top and add a little garam masala and ghee.

14. Close the lid tightly and apply maida paste on the gap of the lid to make it tight.

15. Cook in low flame for 8 minutes.

16. After 15 minutes, open the lid and spread fried, onions and raisins.

17. Serve hot.
