Potato Curry

Cucumber Roti & Potato Curry

Ingredients for Potato Curry:

1. Potato – 2, cut into pieces

2. Onions and tomato – 1 each, chopped

3. Red chillies – 2

4. Ginger-garlic paste – ½ tsp

5. Coconut scrapped – 2 table spoons

6.Coriander powder – ½ tsp

7. Cumin powder – ½ tsp

8. Coriander leaves chopped – 1 table spoon

9. Salt – As required

10. Oil – 1.5 table spoons

How to prepare Potato Curry?

1. In a blender, add tomato, onions, coconut, red chillies, ginger-garlic paste, cumin powder and coriander powder.

2. Add sufficient water and make a fine paste.

3. Heat a kadai and pour 1.5 table spoon of oil.

4. Add the coconut paste to it.

5. Sauté the gravy in medium flame for a while.

6. Continue sauting till raw smell goes out.

7. Add potatoes and sauté for 2-3 minutes more.

8. Add 1.5 cup of water and cook potatoes along with gravy in a pressure cooker.

9. Wait for three whistles and put the flame off.

10. When pressure drops to zero, open the lid and add coriander leaves.

11. Serve hot.
