Pesarattu

Pesarattu is a traditional dosa made in Andhra Pradesh and other Telugu speaking regions. Unlike normal dosa which uses black gram as one of the main ingredients, Pesarattu uses green gram. It’s also made in Rajasthan regions (called as cheeldo), and often used as a snack as well.

Ingredients for Pesarattu:

1. Green gram – ¾ cup

    Raw rice – 2 big spoons

2. Small sized onion – 1

    Ginger – 1-inch piece

    Green chillies – 3

    Salt – For taste

3. Oil – For taste

4. Cumin seeds – ½ small spoon

5. Onions chopped fine – ½ cup

    Green chillies chopped fine – 1 big spoon

6. Ghee – As needed

How to prepare Pesarattu?

1. Soak green gram and rice overnight adding sufficient water.

2. In the early morning, grind it to a smooth paste adding ingredients no: 2.

3. Heat oil and sputter cumin seeds.

4. Add ingredients no: 5 and fry it well.

5. Heat a tawa and pour one big spoon of batter.

6. Spread it to a thin layer and pour a big spoon of ghee on its sides.

7. Sprinkle a little fried onion mixture on its top and slightly press using a spatula.

8. Fold the dosa once and take it from flame.

9. Serve hot with coconut, mint or tomato chutney of your choice.
