Pancake with Banana Filling
Ingredients for Pancake with Banana Filling:
For Filling:
1. Ghee – 1 big spoon
2. Coconut scrapped – 1 cup
3. Sugar – 2 big spoons
4. Kerala banana (big sized) – 1 cup, cut into small square pieces
Cashews broken – 2 big spoons
5. Cinnamon powdered – ¼ small spoon
For Pancake:
6. Maida – ½ cup
Salt – For taste
7. Egg – 1, blended
Milk – ½ cup
Water – ¼ cup
How to prepare Pancake with Banana Filling?
1. Heat ghee in a pan and fry coconut till water content is fully absorbed.
2. Add sugar and mix it well.
3. When sugar is completely melted and coconut is fried well, add banana pieces and fry.
4. When it turns brown, add cinnamon powder and take off from flame. This is used as filling.
5. To prepare pancake, toss maida well adding salt.
6. Add ingredients no: 7 and prepare batter without any lumps.
7. The batter should be able to pour in the tawa to prepare pancakes.
8. Take a non-stick pan and coat with a thin layer of ghee or oil.
9. Pour 1 spoon batter each and prepare pancakes. Flip both sides to cook it well.
10. Place a little filling inside it, roll it once and serve.
