Palappam
Palappam is a traditional Kerala breakfast dish. It’s one of the topmost recipes of Kerala Christians, but now accepted across the state. There are different methods to prepare Palappam/Appam and here is one simple method published in Vanitha. Also read: 17 simple tips to make soft appams.
Ingredients for Palappam:
1. White pachari (raw rice) – 2 cup
2. Scrapped coconut – 1 cup
Cooked white rice – 1 cup
Yeast – ¼ small spoon
3. Sugar – As required
4. Salt – As required
How to prepare Palappam?
1. Wash rice and soak it for 5 hours.
2. Grind rice adding ingredients no: 2.
3. Add sufficient sugar to it, mix well and place it to ferment for 6 hours minimum.
4. When batter rises, add sufficient salt and if needed, add extra sugar too.
5. Mix well and place aside for half hour more.
6. Pour a big spoonful of batter to palappam pan, rotate it and cook appam with lid closed.
7. Continue the process to make tasty palappam.
8. Serve with any vegetarian or non-vegetarian curry.

Palappam – Recipe 2
Ingredients for Palappam Recipe 2:
1. Ponni rice – 2 cups
2. Coconut – 1, scrapped
3. Sugar – 3.5 small spoons
Yeast – ¼-1/2 small spoon
Salt – As per taste
Water – As required
How to prepare Palappam Recipe 2?
1. Soak idli ponni rice for 4 hours.
2. Prepare thick batter by grinding it along with coconut.
3. Take a spoon of batter from it and heat it.
4. When it thickens, put off the flame and allow to cool.
5. Add this thick flour to the batter and blend well.
6. Add ingredients no: 3 and mix well.
7. Batter should be loose similar to dosa batter.
8. Place it overnight or minimum 6 hours to ferment.
9. Prepare Palappam using one big spoon of batter each.
