Orotti

Orotti is a traditional Kerala main course dish made using rice powder. Cumin seeds and coconut are added to rice flour to give extra flavour to this dish. It can be served as such, or a side dish can be added. This dish is also pronounced ‘Oratti’ in certain regions.

Ingredients for Orotti:

1. Rice flour – 2 cups

    Coconut scrapped – ½ cup

    Crushed cumin seeds – ½ small spoon

    Salt – As required

2. Water – As required

How to prepare Orotti?

1. Mix ingredients no: 1 adding sufficient water to prepare the dough.

2. The dough should not be too loose or tightened. It should be able to spread using palm.

3. Make balls equivalent to big poori sized.

4. Spread them to thick dosa-shaped using palm.

5. Apply a little oil or ghee on your palms before you spread orotti.

6. Spread a little oil on pan and cook orotti.

7. Flip both sides and cook well.

8. Serve hot with omlet or honey, or any side dish as you wish.

Now I provide recipe of Orotti dish with a twist, and this recipe was published on Vanitha a few months before the one given above.

Orotti – Recipe 2

Ingredients for Orotti (Recipe 2):

1. Boiled rice (Puzhukkalari) – ¼ kg

2. Coconut scrapped – 1.5 cups

   Coconut milk – ¼ cup

    Salt – As required

3. Cumin seeds – ½ small spoon, powdered

    Pepper powder – ½ small spoon

4. Coconut oil – For frying

How to prepare Orotti (Recipe 2)?

1. Wash rice and soak it well.

2. Grind it well adding ingredients no: 2 without adding water.

3. Add cumin powder and pepper powder and mix well to prepare the batter.

4. Make small balls from them.

5. Take a banana leaf and apply a little oil on its surface.

6. Place each ball on the leaf and spread it to round shapes similar to pathiri or chappatti.

7. Repeat the process for remaining balls.

8. Fry in hot oil.

Orotti – Recipe 3

Ingredients for Orotti (Recipe 3):

1. Rice flour – 2 cups

    Coconut scrapped – 1 cup

    Cumin seeds – ¼ small spoon

    Salt – For taste

2. Boiling water – As required

3. Ghee – A little

How to prepare Orotti (Recipe 3)?

1. Add boiling water to ingredients no: 1 and mix well to prepare the dough.

2. Make orange sized balls from this dough and flatten to pancakes.

3. Grease pan using a little ghee and place a pancake.

4. Flip both sides and cook it well.

5. Continue the process for remaining pancakes too.

6. Serve hot with any jam of your choice or chicken curry.
