North Indian Mutton Biryani

 

Ingredients:

  1. Basmati rice – 1 kg
  2. Onion sliced thin – 750 gm
  3. Mutton – 1 kg
  4. Curd – ½ cup
  5. White vinegar – 2 big spoons
  6. Ginger grinded without adding water – 2 big spoons
  7. Garlic grinded without adding water – 2 big spoons
  8. Green chillies crushed – 3
  9. Turmeric powder – ½ tsp
  10. Chilli powder – 2 tsp
  11. Coriander powder – 2 tsp
  12. Cloves – 10
  13. Cardamom – 10
  14. Cinnamon – 3
  15. Cumin seeds – 2 tsp
  16. Salt – as needed
  17. Star animates – 1 piece
  18. Tomato chopped to small pieces – 2
  19. Sugar – 1 tsp
  20. Potato cut into big pieces – 1
  21. Ghee – 4 big spoons
  22. Cooking oil – as needed

 

Method of preparation:

  1. Pre-heat oven at 175 degree Celsius
  2. Wash rice and soak it for half hour
  3. Heat oil and fry onions till dark brown.
  4. Take half of those onions and keep separately.
  5. Marinate the chicken with all the ingredients except ghee and cardamom and remaining half of fried onions. Keep it for some time.
  6. Heat oil in a pan and add the above mixture till it becomes red. Remove potato pieces and cook chicken in a pressure cooker adding a little hot water.
  7. Half cook rice by adding double quantity water, salt and cardamom. Drain water and keep it aside.
  8. Take a plate and apply ghee and add a layer of rice.
  9. Add a layer of chicken, mixed with potato.
  10. Continue the process till whole rice and chicken are beautifully layered. Rice should form the top layer.
  11. Make small pits on the top of rice here and there with a spoon and add ghee. Close it tightly with a lid and use any flour mixture in the fissure to make it fully sealed.
  12. Place a dish with hot water on the top and bake your biryani in preheated oven for half an hour.
