Mutton Biryani
Ingredients for Mutton Biryani:
- Mutton – 1 kg
- End split green chillies – 12
- Onion – 6
- Shallots – 10
- Garlic crushed – 6
- Ginger crushed – 4 pieces
- Turmeric powder – ¼ tsp
- Salt – as needed
- Vanaspathi – 1 cup
- Ghee – 8 dessert spoon
- Tomato – 1
- Lemon – 1
- Garam masala powder – 2 dessert spoon
- Mint leaves sliced into small pieces – 2 bundles
- Coriander leaves sliced – 4 bundles
- Curd – ½ cup
- Cashew – 100gm
- Raisins – 50 gm
- Cumin seeds – 2 dessert spoon
- Cinnamon 1 inch pieces – 3
- Cloves – 6
- Cardamom – 6
- Star anis pods – 3
- Rice – 750 gm
- Pine apple pieces – 150 gm
How to prepare Mutton Biryani?
- Sauté ingredients 2-7 in ¾ cup vanaspathi and 6 dessert spoon ghee. Add salt, tomato, lemon juice, garam masala powder, mint leaves and coriander leaves as well. Saute it well.
- Add meat along with curd and cook it well.
- Fry some onions in vanaspathi to golden brown colour.
- Fry raisins and cashew in ghee and keep aside.
- Half cook rice using cumin seeds, cinnamon, cloves, cardamom and star anis pods.
- Spread this rice on top of cooked mutton. Sprinkle remaining leaves, pine apple, cashew nuts, raisins and fried onions on top. Pour remaining ghee and vanaspathi as well.
- Close the biryani vessel tightly with lid and seal suing maida flour.
- Bake it and use.
