Meen Maanga Kuzhamb (Fish – Mango Broth)
Ingredients for Meen Maanga Kuzhamb (Fish – Mango Broth):
1. Fish cut into pieces – ½ kg
2. Turmeric powder – 1 small spoon
Salt – For taste
Lemon juice – 1 small spoon
3. Gingelly oil – 100 gm
4. Mustard – 1 small spoon
Fenugreek – 3/4 small spoon
5. Fennel seeds – 1 small spoon
Garlic – 75 gm, removed skin (not chopped)
Shallots – 75 gm
Onions – 150 gm, cut into square pieces
Curry leaves – 2 stems
6. Ginger-garlic paste – 4 small spoons
Turmeric powder – 1 small spoon
Coriander powder – 4 small spoons
Chilli powder – 1.25 big spoon
7. Coconut grinded – ½ cup
Tomato puree – 250 gm
8. Salt – For taste
9. Green mango – 200 gm, chopped into pieces
10. Coriander leaves – Chopped fine, to decorate
How to prepare Meen Maanga Kuzhamb (Fish – Mango Broth)?
1. Marinate fish pieces using ingredients no: 2.
2. Heat oil and sputter mustard and fenugreek seeds.
3. Add ingredients no: 5 and sauté it.
4. Add ingredients no: 6 and mix well.
5. Sauté it for a while and add ingredients no: 7.
6. Cook for a while and add sufficient water.
7. Add mangoes and cook again.
8. When gravy turns thick, add fish pieces and cook again.
9. When fish pieces are cooked well, add coriander leaves.
10. Put off the flame and serve hot.
