Mathanga Erisseri (Pumpkin Erisseri)

Ingredients for Mathanga Erisseri (Pumpkin Erisseri):

1. Pumpkin cut into pieces – ½ kg

2. Cowpeas (Vanpayar) – 150 gm

3. Chilli powder – ½ small spoon

    Turmeric powder – ½ small spoon

    Green chillies – 2, split into two

    Salt – For taste

4. Coconut scrapped – ½

    Cumin seeds – 1 small spoon

    Garlic – 1 clove

5. Coconut scrapped – ½

    Mustard – 2 small spoons

    Curry leaves – 2 stems

    Red chillies, broken into two – 2

6. Oil – 1.5 big spoons

How to prepare Mathanga Erisseri (Pumpkin Erisseri)?

1. Cook cowpeas adding sufficient water.

2. Add pumpkin pieces along with ingredients no: 3 and cook again.

3. When pumpkin is almost cooked, make a fine paste of ingredients no: 4 and add to it.

4. Stir well. When it boils, take off from flame.

5. Heat oil in a pan, sputter mustard.

6. Add curry leaves and red chillies.

7. When it’s 3/4th fried, add scrapped coconut and fry till it turns brown.

8. Add half of this coconut to the erisseri and mix well.

9. Sprinkle remaining portion on its top just before you serve.
