Mango Jelly with Fruit Salad
Ingredients for Mango Jelly with Fruit Salad:
1. Mango fruit grinded smooth – 2 cups
Sugar – 2-3 big spoons
2. Gelatine – 3 small spoons
Water – 3 big spoons
3. Mango chopped fine – 1 cup
For Fruit Salad:
4. Lemon juice/Orange juice – 2 big spoons
Sugar – 3 big spoons
5. Robusta – 1, chopped fine
Apple – 1, chopped fine
Mango – 1, Chopped fine
Orange – 1, separated
Seedless grapes – 1 cup
6. Pineapple chopped fine – 2 cups
Sugar – ¼ cup
Water – ½ cup
Cloves – 3
For Coconut Milk Custard:
7. Thick coconut milk – 1.5 cups
Condensed milk – ½ tin
8. Cornflour – 2 or 3 big spoons
9. Vanilla essence – A drop
How to prepare Mango Jelly with Fruit Salad?
1. To prepare jelly, grind and strain mango fruit and transfer to a bowl.
2. Add sugar and mix well.
3. Using double boiling method, place this bowl in boiling water to heat it.
4. Soak gelatine in cold water and melt it using double boiling method (as above).
5. Add gelatine to mango paste and mix well.
6. Take off from boiling water, and allow the mixture to cool.
7. Refrigerate this jelly.
8. When jelly is half set, add mango pieces and mix it slowly.
9. Spring a little water in a ring mould and pour this mixture into it.
10. Refrigerate it and allow to set.
11. To prepare fruit salad, melt orange/lemon juice in sugar and mix it with ingredients no: 5.
12. Cook ingredients no: 6 and when it cools, add to above fruit mixture.
13. Remove the cloves, mix the fruit salad and refrigerate.
14. To prepare coconut milk custard, mix together coconut milk and condensed milk.
15. Slightly heat it and keep stirring.
16. When milk mixture heats, mix corn flour with a little milk and add to it.
17. Keep stirring till contents thicken and put off the flame.
18. When it cools, add a drop of vanilla essence, mix well and refrigerate.
19. Just before you serve, place the ring mould upside down into the serving plate to transfer the jelly.
20. In the centre pit, fill fruit salad.
21. Decorate jelly’s outside edge with fruits and serve with coconut milk custard.
