Lime Rice

Ingredients for Lime Rice:

1. Oil – 1 big spoon

2. Bengal gram (Kadala Paripp) – 2 small spoons

3. Mustard – ½ small spoon

    Red chillies broken – 2

    Curry leaves – A stalk

4. Turmeric powder – ¼ small spoon

    Cooked basmati rice – 2 cup

5. Salt and lemon juice

6. Fried cashews, coriander leaves chopped – To decorate

How to prepare Lime Rice?

1. Heat oil in a big pan and sauté Bengal gram till it turns golden brown.

2. Add ingredients no: 3 and sauté again.

3. Add turmeric powder, mix it well and then add cooked basmati rice.

4. Take off from stove and mix the rice well.

5. Add sufficient salt and lemon juice and mix it well.

6. Decorate using fried cashews and coriander leaves.

7. Serve hot.

Note: You can prepare this lemon rice using left-over rice of previous day too.
