Hyderabadi Masala Chicken

Ingredients for Hyderabadi Masala Chicken:

1. Chicken – 1 kg

2. Onions – 3

3. Shallots – 5

4. Ginger-garlic paste – 3 tsp

5. Curd – ½ cup

6. Coriander seeds – 4 tsp

7. Cumin seeds – 2 tsp

8. Cardamom – 2

9. Red chillies – 10

10. Pepper – ¼ tsp

11. Turmeric powder – ¼ tsp

12. Kashmiri chilli powder – 1 tsp

13. Garam masala – 1 tsp

14. Salt and oil – For preparation

How to prepare Hyderabadi Masala Chicken?

1. Clean chicken and drain excess water.

2. Fry sliced onion in oil and crush it well using hands.

3. Add beaten curd, salt, ginger-garlic paste and above crushed onions to chicken and mix well.

4. Marinate chicken and allow it to rest for an hour.

5. Heat a pan and dry roast coriander seeds, red chillies, cumin seeds, cardamom and pepper.

6. When it cools, make a fine paste adding shallots and turmeric powder.

7. Heat a pan and add a little oil.

8. Add this gravy to the pan and sauté well till oil separates.

9. Add marinated chicken pieces, salt and Kashmiri chilli powder and mix it well.

10. Close the lid and cook for 5 minutes.

11. Add 1 cup of hot water and cook chicken for 15 minutes with lid closed.

12. When chicken is cooked well, add garam masala powder.

13. When oil clears and gravy thickens, put off the flame.

Note: Use sunflower oil for better results.
