Green Mango Chutney
Ingredients for Green Mango Chutney:
1. Green mango chopped – 2
2. Water – 2 cups
3. Grated jaggery – 1.5 cups
4. Turmeric powder – ½ tsp
5. Chilli powder – 1 table spoon
6. Cumin fried and powdered – 1 tsp
7. Salt – For taste
For tempering:
8. Oil – 2 tablespoons
9. Fenugreek – ¼ tsp
10. Sesame seeds – 1 table spoon
11. Asafoetida powder – ½ tsp
12. Fennel seeds – 1 table spoon
How to prepare Green Mango Chutney?
1. Heat oil in a pan and sauté fenugreek till brown colour.
2. Add sesame seeds and fennel seeds and fry again.
3. Add chopped mango pieces and turmeric powder.
4. Sauté in medium flame for2 minutes.
5. Now reduce the flame, close the lid and cook mango for 6 minutes
6. Add chilli powder and salt, followed by water and cook for 15 minutes.
7. Add jaggery and cook till it melts and blend with mangoes.
8. Open the lid and cook till water content is fully absorbed.
9. Add roasted cumin powder and mix well.
10. Put off the flame and allow your chutney to cool.
11. You can store it in air-tight containers.
