Full Chicken Biryani

Ingredients for Full Chicken Biryani:

1. Chicken – 1

2. Kashmiri chilli powder – 1.5 small spoons

   Turmeric powder – A pinch

    Lemon juice – From 1 lemon

    Salt – For taste

3. Coconut oil/Oil of your choice – ¼ cup

4. Cinnamon – 2

    Cloves – 5

    Cardamom – 3

    Cumin seeds – ¼ small spoon

    Star anise – 1

5. Onion – 6 small, sliced

    Ginger chopped – 1 big spoon

    Garlic chopped – 1.5 big spoons

    Green chillies – 25, chopped

    Tomato – 4, chopped

6. Mint leaves – 6

    Garam masala powder – 1.5 small spoons

    Coriander leaves – ¼ cup, chopped

7. Basmati rice – 3 cups

8. Oil/Ghee – 2 big spoons

8. Cashews, raisins, onions sliced thin – 5 big spoons

10. Ghee – 1.5 big spoons

11. Coconut oil/Oil of your choice – 8 big spoons

12. Salt – A little

     Kashmiri chilli powder – ½ small spoon

     Turmeric powder – A pinch

13. Coriander leaves, mint leaves, pomegranate seeds – To decorate

How to prepare Full Chicken Biryani?

1. Marinate cleaned chicken using ingredients no: 2.

2. Heat oil and fry ingredients no: 4, followed by ingredients 5 one after another.

3. When raw smell goes out and the ingredients are well sauted, place marinated chicken inside it.

4. Cook chicken in low flame with lid closed,

5. Flip chicken two times, so that it’s well cooked.

6. Remove chicken from gravy.

7. Add ingredients no: 6 to the gravy and mix well.

8. Soak rice for 1 hour.

9. Heat ghee/oil in a pan and fry half of ingredients no: 9.

10. In the remaining oil, sauté remaining onion mixture.

11. Add 10 cups of water and 3 small spoons of salt and boil the contents.

12. Add 1 spoon each of oil and lemon juice, and stir well.

13. Add soaked rice and cook it with lid open.

14. Set rice and masala as alternate layers.

15. Sprinkle garam masala powder, coriander leaves and mint leaves.

16. On top, spread fried onion mixture and dum (cook in air-tight pot) the contents.

17. Marinate cooked chicken with ingredients no: 12, and fry in a little oil.

18. Place the full chicken on the top of dum biryani.

19. Decorate with ingredients no: 13, and serve hot.
