Eggplant Goulash (Vazhuthananga Goulash)
Ingredients for Eggplant Goulash (Vazhuthananga Goulash):
1. Brinjal (eggplant) – 400 gm
2. Coconut oil – 4 small spoons
3. Shallots – 150 gm chopped
Green chillies – 3, chopped
Curry leaves – 1 stalk
4. Curd – 150 milli
5. Lemon juice – From 1 lemon
Salt – For taste
How to prepare Eggplant Goulash (Vazhuthananga Goulash)?
1. Pierce eggplants into a Pappada Kambi (iron stick used to fry pappadam) and place about flame.
2. Fry eggplants till they are well cooked.
3. Remove the skin and chop the flesh into small pieces.
4. Heat oil and sauté ingredients no: 3.
5. Add eggplant pieces and continue sauting.
6. Beat curd well and add it to the brinjal, along with lemon juice and salt.
7. Put off the flame.
8. You can serve it hot or chilled.
