Duck Roast (Recipe 3)

Ingredients for Duck Roast (Recipe 3):

1. Duck – 1

2. Coconut oil – 6.5 small spoons

3. Kashmiri chilli – 15, broken into pieces

    Coriander seeds – A handful

4. Fennel seeds – 2 pinch

    Cinnamon – 2.5-inch piece

    Cardamom – 4

    Cloves – 3

    Mace – 2

5. Meat masala powder – 1 small spoon

   Pepper powder – ½ small spoon

   Turmeric powder – 1/4 small spoon

6. Mustard – ½ small spoon

7. Shallots – 300 gm, chopped

   Curry leaves – 2 stems

   Ginger – 1 small piece, chopped

   Garlic – 1 full, chopped

8. Tomato – 1, chopped fine

    Salt – For taste

How to prepare Duck Roast (Recipe 3)?

1. Clean duck and cut into 8-10 pieces.

2. Heat ½ small spoon of oil in a pan and fry chillies till they turn colour.

3. Add coriander seeds and sauté again.

4. When the colour changes, put off the flame.

5. Add ingredients no: 4 and mix well.

6. When the contents cool, make a powder using mixer.

7. Add ingredients no: 5 to it, along with a little water and blend contents again to get a fine paste.

8. Heat oil in a pan and sputter mustard seeds.

9. Add ingredients no: 7 and sauté well.

10. Add tomato and salt, and continue sauting till it turns golden brown.

11. Add duck pieces to it and sauté for 5 more minutes.

12. Transfer the contents to a pressure cooker and cook it.

13. When pressure drops to zero, open the lid of cooker and take the thin layer of oil on the surface of duck gravy.

14. Transfer that oil to a pan and fry duck pieces one after another.

15. In the remaining oil, add the duck gravy.

16. When the gravy thickens and turn brown, add the fried duck pieces.

17. Continue cooking till the duck pieces get a good coat of gravy.
