Duck Drumstick Curry (Tharavu Minthali Curry)
Ingredients for Duck Drumstick Curry (Tharavu Minthali Curry):
1. Duck – 1 kg
2. Moringa tree bark – ¾ cup
3. Red chillies – 5
Mustard – ½ small spoon
Cinnamon – 3 pieces
Cardamom – 6
Cloves – 4
4. Vinegar – 1 cup
5. Oil – As required
6. Ginger chopped fine – ½ small spoon
Garlic chopped fine – ½ small spoon
Green chillies chopped fine – ½ small spoon
7. Drumstick – 2, cut into 2-inch pieces
8. Salt – For taste
9. Coriander leaves – To decorate (optional)
How to prepare Duck Drumstick Curry (Tharavu Minthali Curry)?
1. Cut duck into small pieces, after cleaning thoroughly.
2. Scrape bark from moringa tree and remove the thick outer yellow skin.
3. Dip this bark along with ingredients no: 3 in 1 cup vinegar for an hour.
4. When the contents turn soft, make a fine paste.
5. Take a little of this paste and marinate duck pieces.
6. Heat oil in a pan and sauté ingredients no: 6.
7. When contents are well sauted, reduce the flame and add the remaining masala paste.
8. Cook the contents for a few minutes and add marinated duck, drumstick and salt.
9. Never add water.
10. Close the lid and cook duck in low flame till it is done.
11. Check salt and add if extra needed.
12. Your Minthali curry is ready. Decorate with coriander leaves if needed.
13. You can serve this special duck curry with appam. It’s a perfect combination.
