Dry Prawns with Mango (Unakka Chemmeen Maanga Koottu)

Ingredients for Dry Prawns with Mango (Unakka Chemmeen Maanga Koottu):

1. Coconut oil – As required

2. Shallots chopped fine – ¼ cup

    Curry leaves – 2 stems

3. Dried prawns cleaned – ¾ cup

4. Chilli powder – 1 small spoon

    Salt – For taste

5. Green mango – 3 or 4, sliced thin

    Chilli powder – 1 small spoon

    Coconut oil and salt – As required

How to prepare Dry Prawns with Mango (Unakka Chemmeen Maanga Koottu)?

1. Heat oil and fry shallots and curry leaves.

2. Filter fried shallots and curry leaves from oil using a spatula and add a small spoon oil.

3. Deep fry prawns till they crispy.

4. Add chilli powder and salt and mix well.

5. Add fried curry leaves and shallots, mix well and put off the flame.

6. Mix together ingredients no: 5 in a serving plate.

7. Add half quantity of fried prawns to it and toss it well.

8. Sprinkle remaining fried prawns on its top and serve.
