Dates and Carrot Cake

Ingredients for Dates and Carrot Cake (Recipe 1):

1. Dates – 300 gm, seedless

2. Warm water – 1 cup

    Baking soda – ½ small spoon

3. Butter – 125 gm

    Brown sugar – 1 cup

    Vanilla essence – 1 small spoon

    Pineapple chopped into small pieces and boiled – 2 big spoons

4. Carrot – 1, grated and squeezed

5. Maida – 1.25 cups

    Baking powder – ½ small spoon

6. Almonds chopped – To decorate

How to prepare Dates and Carrot Cake (Recipe 1)?

1. Remove seeds of dates, add baking soda and soak in water for 2 hours.

2. Strain water content and blend once using a mixer.

3. Pre-heat oven in 180 degree celsious.

4. Beat ingredients no: 3 in a bowl.

5. Add carrot and dates mixture and beat the contents slowly.

6. Blend maida and baking powder and then add to fruit mixture. Batter is ready.

7. Grease a cake tray and put a butter paper.

8. Pour cake batter into the tray and sprinkle chopped almonds on its top.

9. Bake the cake in pre-heated oven for 45-48 minutes.

Dates & Carrot Cake (Recipe 2)

 

Ingredients for Dates & Carrot Cake (Recipe 2):

1. Maida – 2 cups

    Baking powder – 1 small powder

    Baking soda – 1 small powder

2. Powdered sugar – 2 cups

    Oil – 1.5 cups

3. Yellow yolk – 3

4. Grated carrot – 2 cups

    Dates chopped fine – 1 cup

    Cashews – 1 cup

    Cloves, cinnamon and nutmeg powdered – 1.5 small spoons

5. Vanilla essence – A few drops

    Honey/Caramelized sugar syrup – ½ cup

6. Egg white – 3

How to prepare Dates & Carrot Cake (Recipe 2)?

1. Pre-heat oven in 180 degree celsious.

2. Blend together ingredients no: 1.

3. Beat oil and powdered sugar together, till it turns soft.

4. Add yellow yolk to it and beat 2 more minutes.

5. Add ingredients no: 4 to it and mix well.

6. Add essence and Honey/Caramelized sugar syrup and mix the contents well.

7. Beat white yolk till it turns thick.

8. Add maida mixture and egg white alternatively to carrot mixture.

9. Mix the contents well and pour this batter to greased baking tray.

10. Bake it in pre-heated oven for 40-50 minutes.
