Curry Leaves Chutney

Ingredients for Curry Leaves Chutney:

1. Curry leaves – 1 big cup

2. Coconut scrapped – 1 cup

3. Coriander leaves – 1 tsp

4. Cumin seeds – ½ tsp

5. Red chillies – 4

6. Turmeric powder – A pinch

7. Pepper powder – 1 tsp

8. Tamarind – A little

9. Jaggery – A little

10. Salt – For taste

For tempering:

11. Oil – 3 tsp

12. Mustard – ¼ tsp

13. Garlic – 7 cloves

14. Curry leaves – 6

How to prepare Curry Leaves Chutney?

1. Take curry leaves, coriander seeds, cumin seeds, pepper, red chillies, salt, tamarind and turmeric powder in a pan.

2. Add sufficient water and cook the contents in medium flame.

3. When curry leaves are well cooked, put off the flame and allow the contents to flame.

4. Make a fine paste of this mixture, along with coconut and jaggery.

5. Heat 1 table spoon of oil in a pan and sputter mustard seeds.

6. Add garlic cloves and fry till they turn golden colour.

7. Add curry leaves too, followed by ground curry leaf paste.

8. Cook the curry leaves chutney in medium flame for 4 more minutes and put off the flame.
