Chicken Sambar

Ingredients for Chicken Sambar:

1. Chicken – 1 kg

2. Coconut oil – 3 big spoons

3. Red chillies – 4

4. Coriander seeds – 1 small spoon

5. Coconut scrapped – ½ cup

6. Onions chopped – 2

7. Green chillies – 2, chopped

8. Ginger-garlic paste – 1.5 small spoons

9. Turmeric powder – ½ small spoon

10. Garam masala powder – 1 small spoon

11. Salt – As required

12. Tomato – 2, big

13. Toor dal (Pigeon pea) cooked – ½ kg

14. Coconut oil – 1 big spoon

15. Mustard– ½ small spoon

      Red chillies – 2

      Curry leaves – As needed

16. Coriander leaves – As needed

How to prepare Chicken Sambar?

1. Clean chicken and keep aside.

2. Heat a pan and pour a big spoon of oil and add red chillies, coriander and coconut.

3. Fry it till it turns light brown colour.

4. When contents cool off, make a fine paste.

5. Heat 2 big spoons of oil in a pan and sauté onions and green chillies.

6. Add ginger-garlic paste and sauté till its odour changes.

7. Add turmeric powder, garam masala powder and salt, and mix the contents well.

8. Add tomatoes and sauté again.

9. Add gravy and a little water, and allow the contents to boil.

10. Add chicken pieces, close the lid and cook it well.

11. When curry thickens, add the cooked dal and allow the contents to boil well.

12. Take off from flame.

13. Heat oil and sputter mustard seeds, followed by red chillies and curry leaves.

14. Pour this oil to chicken sambar and serve.
