Chicken Mandi

Ingredients for Chicken Mandi:

1. Chicken – 2 legs, full

2. Garlic crushed – 2 small spoons

    Lemon juice – ½ cup

    Pepper powder – ½ small spoon

    Arabic spice powder – 2 big spoons

    Butter – 1 big spoon

    Salt – For taste

3. Biryani rice (Basmati) – 2 cups

4. Ghee – 1 big spoon

5. Onions – 2, sliced

6. Boiled water – 1.5 cups

    Salt – For taste

    Cardamom – 5

    Cinnamon – 3 pieces

    Cloves – 5

    Saffron – 1 small spoon

How to prepare Chicken Mandi?

1. Clean chicken legs and keep aside (never cut them into pieces).

2. Take ingredients no: 2 in a big bowl and mix well.

3. Marinate chicken leg using this gravy and refrigerate for 1 hour.

4. Wash rice and soak for 10 minutes. Drain excess water.

5. Spread rice in an oven-proof dish.

6. Heat ghee and fry onions till they turn golden brown.

7. Add fried onions to rice and mix it, followed by ingredients no: 6.

8. Mix the contents well and wrap the dish using an aluminium foil.

9. Using a knife, make holes in the aluminium foil here and there.

10. Place marinated chicken legs above the perforated foil.

11. Wrap chicken pieces using another aluminium foil and perfectly seal it.

12. Pre-heat oven in 150 degree celsious.

13. Place the oven-proof dish in the oven and bake rice along with chicken for 1.5 hours.

14. Both chicken and rice should be well-cooked.

15. Transfer rice to the serving plate and place the chicken pieces on its top.
