Brinjal Fried in Curd Curry

Ingredients for Brinjal Fried in Curd Curry:

1. Brinjal – 2, medium sized

2. Salt – As required

    Turmeric powder – ½ small spoon

3. Oil – As needed

4. Cumin seeds – ½ small spoon

    Onions – 2, chopped fine

    Green chillies – 2, chopped fine

5. Red chilli powder – 1.5 small spoons

    Turmeric powder – ½ small spoon

6. Tomato – 2, chopped fine

7. Curd – 250 milli

8. Coriander leaves chopped – ¼ cup

How to prepare Brinjal Fried in Curd Curry?

1. Cut brinjal to big square pieces.

2. Marinate brinjal with turmeric powder and salt and allow it to rest for a few minutes.

3. Deep fry in half cup oil.

4. Heat a little oil and sauté ingredients no: 4.

5. When it turns light brown, reduce the flame and sauté ingredients no: 5.

6. When a pleasant aroma starts coming out, add tomatoes and sauté till oil forms a thin layer.

7. Add fried brinjal pieces and take off the flame.

8. Spread the mixture to a plate.

9. Pour thick curd on its top, decorate with coriander leaves and serve.
