Banana Cake (Ethapazham Cake)

Ingredients for Banana Cake (Ethapazham Cake):

1. Kerala Banana (Ethapazham) – 2, cut into small pieces

    Ghee – 2 big spoons

2. Eggs – 5

    Sugar – 2.5 big spoons

3. Milk – 1 glass

    Corn flour – A big spoon

    Vanilla essence – 2 drops

4. Oil – A little

5. Ghee – A little

    Raisins and cashews – To garnish

How to prepare Banana Cake (Ethapazham Cake)?

1. Fry banana pieces in 2 big spoons of ghee, till they turn light brown.

2. Blend ingredients no: 2 in a bowl.

3. Mix ingredients no: 3 in another bowl.

4. Mix banana, egg mixture and corn flour mixture together.

5. Heat a non-stick flat pan and pour a little oil.

6. Pour the mixture in pan and cook in flame for 20 minutes in low flame.

7. Close the lid too.

8. Fry raisins and cashews in ghee and pour on the top of the mixture, just before it fully sets.

9. Allow it to cool.

10. Transfer your banana cake to a plate and cut into desired pieces.
