Baji Chilli Vindaloo

Ingredients for Baji Chilli Vindaloo:

1. Baji chilli – ¼ kg

2. Salt, turmeric powder – As needed

3. Oil – 1 cup

4. Onion chopped – ¼ kg

5. Garlic paste – 1 big spoon

5. Mustard – 1 small spoon

    Kashmiri chilli powder – 1 big spoon

    Cumin – 2 small spoons

    Fenugreek – 1 small spoon

7. Tomato chopped – 2, big

    Ginger paste – 1 big spoon

8. Salt – For taste

9. Sugar – 1 small spoon

10. Vinegar – 1 big spoon

How to prepare Baji Chilli Vindaloo?

1. Make a fine paste of ingredients no: 6.

2. Split the centre portion of baji chillies and marinate using salt and turmeric powder.

3. Allow it to rest for 15 minutes.

4. Sauté in oil and keep aside.

5. In the remaining oil, fry onions and keep aside.

6. Later in the same oil, sauté garlic paste followed by paste ground using ingredients no: 6.

7. Add tomato and ginger and sauté again till a thin layer of oil appears.

8. Add fried onions, salt and sufficient water.

9. Bring the contents to boil, and add baji chillies, sugar and vinegar.

10. Put the flame off.
