Ayala Pollichath

Ingredients for Ayala Pollichath:

1. Ayala (Mackerel) – 2

2. Chilli powder – 2 small spoons

    Turmeric powder – ½ small spoon

    Pepper powder – ½ small spoon

    Salt – For taste

3. Coconut oil – As needed

4. Fenugreek – ½ small spoon

5. Onion – 1, chopped fine

6. Ginger paste – 1 big spoon

    Garlic paste – 1 big spoon

    Tomato – 1, chopped fine

    Green chillies – 3, chopped

    Chilli powder – 1 small spoon

    Salt – As required

    Curry leaves – As required

7. Banana leaves – As required

How to prepare Ayala Pollichath?

1. Clean the fish as whole and make deep cuts all over its body.

2. Marinate fish using ingredients no: 2 and allow it to rest for half an hour.

3. Deep fry the marinated fish in hot oil after half an hour.

4. In the same pan, add two big spoons of coconut oil and sauté fenugreek seeds.

5. Sauté onions, followed by ingredients no: 6 till the oil clears.

6. Place banana leaves above flame and make them tender.

7. Place masala on a banana leaf bit as a layer and place fish on its top.

8. Place remaining masala as the next layer and wrap the leaf to completely seal it.

9. Place it on a tawa and cook for 10 minutes in low flame or bake it.

10. Flip both sides to cook it perfectly.
