Avial for Kozhikode Sadya

Ingredients for Avial for Kozhikode Sadya:

1. Vegetables cleaned and cut into 1 inch pieces:

Elephant yam – 1 cup

Banana – ½ cup

Long beans green – ¼ cup

Snake gourd – ¼ cup

Carrot – ¼ cup

Drum stick – ¼ cup

Cucumber – ¼ cup

Bitter gourd – 1 big spoon

2. Coconut oil – 1 big spoon

    Turmeric powder – 2 small spoons

    Chilli powder – 1 small spoon

    Salt – As required

3. Curd – 1 cup

    Jaggery – 1 piece (1 Achu)

4. Coconut scrapped – 1 cup

    Green chillies – 5

    Curry leaves – 2 stalks

5. Coconut oil – ½ cup

How to prepare Avial for Kozhikode Sadya?

1. Take all vegetables listed as 1 in an urli, add sufficient water and mix ingredients no: 2 to it.

2. Add curd and jaggery to it, mix well and cook in low flame with lid closed.

3. When vegetables are well cooked, remove the lid and allow the water content to be fully absorbed.

4. Crush together coconut and green chillies and add to the cooked vegetables.

5. Also add curry leaves and mix the ingredients well.

6. When steam starts coming out, add coconut oil and put the flame off.

7. Mix the contents after sometime and serve.
