Attinkaal Naadan Roast (Lamb Leg Country-side Roast)

Ingredients for Attinkaal Naadan Roast (Lamb Leg Country-side Roast):

1. Lamb leg (tender mutton) – 1-1.25 kg

2. Chilli powder – 1 big spoon

    Ginger – 1 piece

    Garlic – 1 (as full)

    Meat masala powder – 1 big spoon

    Vinegar – 1 small spoon

3. Oil – As required

4. Onions sliced thin – 2

5. Shallots sliced thin (lengthwise) – 2

6. Potatoes fried – To decorate

How to prepare Attinkaal Naadan Roast (Lamb Leg Country-side Roast)?

1. Cut lamb leg to two pieces and make deep cuts in the flesh.

2. Make a fine paste of ingredients no: 2 and marinate the lamb.

3. Allow it to rest for 1 or 2 hours.

4. Add a little water and cook the meat. (Add water sufficient to cook it, never add extra).

5. When it’s well cooked, pick mutton pieces only.

6. Fry these leg pieces in oil till all its sides turn light brown.

7. Fry onions till they turn golden brown and then add to mutton pieces.

8. Sauté shallots in a little oil and add gravy.

9. When it boils, pour on the top of fried mutton.

10. Decorate with fried potatoes and serve.
