Apricot Payasam
Ingredients for Apricot Payasam:
1. Rice (cooked well) – ½ cup
2. Apricot – ½ cup
3. Apricot broken – 2 tablespoons
4. Sugar – ½ cup
5. Cardamom powder – ½ tsp
6. Saffron – ½ tsp
7. Milk – 2 cups
8. Almonds and pista broken – 2 teaspoons
How to prepare Apricot Payasam?
1. Soak ½ cups of apricot in hot water for 4 or 5 hours.
2. Remove the seeds and make a fine paste.
3. Heat milk in a pan and add rice, sugar, almonds, pista, saffron and cardamom.
4. Boil the contents in low flame for 5-8 minutes.
5. Add both apricot paste and broken and mix the contents well.
6. Cook in low flame for 5 minutes.
7. Take off from flame and decorate using a few almonds and pista.
