Sweet Karanchi

Ingredients for Sweet Karanchi:

1. Rava – ½ cup

2. Sugar – ½ cup

3. Dry coconut scrapped – 1 cup

4. Raisins – 15

    Broken cashews – 10

    Almonds broken – 8

    Rock Candy (Kalkandam) – 1 piece crushed

    Cardamom powder – 1 small spoon

5. Maida – 2 cups

6. Salt – a pinch

    Water – As required

7. Coconut oil – For frying

How to prepare Sweet Karanchi?

1. Roast rava for a while and keep aside.

2. Make sugar solution by boiling sugar with ¼ cup water.

3. Add rava, coconut and ingredients no: 4 to it and mix well.

4. Add water and salt to maida, mix well and make small balls out of it.

5. Now spread each ball in round shape and thin sized, similar to chappatti and cut into 4 equal quadrants.

6. Stuff a little rava mixture inside each piece, and stick it together so that maida coating fully covers stuffed rava mixture.

7. Continue the process to prepare all sweet karachis and fry in hot oil.
