Vazhuthananga Thoran (Brinjal Thoran)

Ingredients for Vazhuthananga Thoran (Brinjal Thoran):

1. Brinjal – 1/4 kg

2. Coconut scrapped – 1 cup

    Green chillies – 2

    Garlic – 2 cloves

    Cumin – ½ small spoon

    Turmeric powder – ¼ small spoon

3. Oil – 2 big spoons

4. Mustard – ½ small spoon

    Curry leaves – 1 stem

    Red chilli – 1

How to prepare Vazhuthananga Thoran (Brinjal Thoran)?

1. Chop egg plant into tiny pieces.

2. Wash it well and strain to remove excess water.

3. Blend ingredients no: 2 in a mixer.

4. Heat oil and sputter mustard seeds.

5. Add chilli and curry leaves, followed by coconut mixture.

6. Sauté it, and then add chopped brinjal.

7. Cook till brinjal is well-cooked and water content is fully absorbed.
