Brinjal Fry (Vazhuthananga Fry)
Ingredients for Brinjal Fry (Vazhuthananga Fry):
1. Brinjal (Vazhuthananga/Kathirikka) – ¼ kg
2. Chilli powder – 1 big spoon
Salt – For taste
Pepper powder – 1 small spoon
Ginger – 1 small piece
Garlic – 2 cloves
Shallots – 2
3. Oil – 1 cup
How to prepare Brinjal Fry (Vazhuthananga Fry)?
1. Cut brinjal into round pieces of ¼-inch thickness.
2. Wash in water and strain water.
3. Make a fine paste of ingredients no: 2 and marinate brinjal pieces.
4. Allow it to rest for a while and deep fry in hot oil.
5. Fry till both sides are well cooked.
