Nadan Fried Rice (Countryside Fried Rice – Kerala Style)

Ingredients for Nadan Fried Rice (Countryside Fried Rice – Kerala Style):

1. Raw rice (Pachari) of good quality – 2 cups

2. Turmeric powder – ¼ tsp

3. Salt – A little

4. Eggs – 2

5. Salt – A pinch

6. Dalda (Vanaspati) – 1 table spoon

7. Carrot chopped – 1 cup

8. Cabbage chopped – ½ cup

9. Spinach chopped – 1 cup

10. Thazhuthama (hogweed) leaves – ½ cup

11. Sprouted elephant yam flower – ¾ cup

12. Pumpkin leaves (tender portion) – ¾ cup, chopped

13. Coconut scrapped – 1 cup

14. Green chillies – 4

15. Cumin – ½ tsp

16. Garlic – 5 cloves

17. Lemon juice – 1.5 table spoons

18. Butter/Dalda – 2 table spoons

19. Pepper powder – 1 table spoon

20. Sugar – 1 tsp

21. Coriander leaves chopped – ½ cup

How to prepare Nadan Fried Rice (Countryside Fried Rice – Kerala Style)?

1. Wash rice, strain it, add turmeric powder and salt.

2. Cook rice till 3/4th done and strain water.

3. Heat dalda in a pan and scramble eggs. Keep aside.

4. Crush ingredients 13-16.

5. Heat a big pan and pour butter/dalda.

6. Add carrot and cabbage, and sauté for a while.

7. Add chopped leaves and crushed coconut mixture.

8. Continue cooking till steam comes out.

9. Add rice, lemon juice, scrambled eggs, pepper powder and sugar, one after one.

10. Add half quantity of coriander leaves and mix well.

11. Transfer your rice to serving plates and decorate with remaining coriander leaves.

12. Serve with pickle, pappad, mint chutney, curd etc.

Note: You can also prepare this rice using green gram (payar)  leaf, thavara leaf, green peas etc.
