Crunchy Ajwain Puri
Ingredients for Crunchy Ajwain Puri:
1. Wheat flour – 1 cup
2. Semolina – 1 table spoon
3. Ajwain – ½ tsp
4. Oil – 1.5 tablespoons
5. Salt – For taste
6. Lukewarm water – ½ cup
7. Oil – For frying
How to prepare Crunchy Ajwain Puri?
1. Mix wheat flour and semolina in a mixing bowl.
2. Add ajwain, salt and 1 tablespoon of oil and mix the contents.
3. Add water and knead the dough.
4. Apply a little oil on its surface and allow it to rest for half an hour.
5. Make puris as usual and fry in hot oil.
Kesar Sreekhand
Ingredients for Kesar Sreekhand:
1. Saffron – 15-20 nos.
2. Lukewarm water – 2 spoons
3. Thick curd – 3 cups
4. Powdered sugar – ½ cup
5. Cardamom powder – 1 tsp
6. Dry fruits – As required
How to prepare Kesar Sreekhand?
1. Soak saffron in lukewarm milk for 4 hours.
2. Tie curd in a muslin cloth and hang it for 4 hours.
3. When water content is completely removed, transfer curd to a bowl.
4. Add powdered sugar, cardamom powder and saffron along with milk.
5. Mix the contents well and transfer it to serving bowls.
6. Decorate each bowl with dry fruits and place in refrigerator.
7. Serve it chilled along with Ajwain Puri.
