Semiya Brinji
Ingredients for Semiya Brinji:
- Semiya (vermicelli) – 500 gm
- Dalda – 25 ml
- Refined oil – 25 gm
- Mustard – 10 gm
- Ginger sliced to thin lengthy pieces – 25 gm
- Green chillies with end split – 25 gm
- Curry leaves – 3 stem
- Onion sliced – 100 gm
- Carrot sliced – 50 gm
- Capsicum sliced – 50 gm
- Cabbage sliced – 100 gm
- Coconut scrapped – 1
- Ghee – 25 milli
- Salt – as needed
- Sugar – 25 gm
How to prepare Semiya Brinji?
- Add vermicelli to water and half cook it.
- Heat oil and dalda together in a pan and splutter mustard seeds.
- Sauté ginger, green chillies, onion and curry leaves together.
- Add vegetables and sauté again.
- Add half of scrapped coconut and sugar. Stir well.
- Add vermicelli and salt. Stir well.
- Add ghee on the top along with remaining coconut.
