Rava – Apricot Pudding

Ingredients for Rava – Apricot Pudding:

1. Milk – 4 cups

    Sugar – ½ cup

2. Roasted semolina (rava) – 1 cup

3. Butter – 1/3 cup

4. Yellow yolk – 3

5. White yolk – 3

6. Sugar – 3 big spoons

For Toping:

7. Dry apricot – 20

   Water – 2 cups

8. Sugar – 1 big spoon

9. Orange juice – 2 big spoons

How to prepare Rava – Apricot Pudding?

1. Pre-heat oven in 180 degree celsious.

2. Mix milk and sugar and boil well.

3. Add semolina and mix well.

4. Reduce the flame and cook for 5 minutes. Keep stirring.

5. Take off the flame, mix butter and keep aside. Allow to cool completely.

6. Beat the yellow yolk, add to the above rava mixture and mix well.

7. Beat white yolk in a bowl and when it slightly thickens add sugar one spoon each and beat again.

8. When sugar is completely dissolved and the mixture turns thick, add to rava mixture and mix all the contents.

9. Transfer the above contents to a baking pan, big enough to add 5 cups of water more.

10. Place this baking pan inside another big pan and pour hot water inside the big one till half portion of small pan is immersed in water.

11. Bake the mixture for half an hour in the pre-heated oven till it turns light brown.

12. Once it is done, allow to cool.

13. To prepare topping, soak apricot in water for 2-3 hours and cook it adding same water.

14. Also add sugar and cook it well.

15. When the contents cool, add orange juice and mix well.

16. Pour this topping on Rava Pudding and serve lukewarm.
