Mutton Biryani


 Ingredients for Mutton Biryani:

  1. Mutton – 1 kg
  2. End split green chillies – 12
  3. Onion – 6
  4. Shallots – 10
  5. Garlic crushed – 6
  6. Ginger crushed – 4 pieces
  7. Turmeric powder – ¼ tsp
  8. Salt – as needed
  9. Vanaspathi – 1 cup
  10. Ghee – 8 dessert spoon  
  11. Tomato – 1
  12. Lemon – 1
  13. Garam masala powder – 2 dessert spoon
  14. Mint leaves sliced into small pieces – 2 bundles
  15. Coriander leaves sliced – 4 bundles
  16. Curd – ½ cup
  17. Cashew – 100gm
  18. Raisins – 50 gm
  19. Cumin seeds – 2 dessert spoon
  20. Cinnamon 1 inch pieces – 3
  21. Cloves – 6
  22. Cardamom – 6
  23. Star anis pods – 3
  24. Rice – 750 gm
  25. Pine apple pieces – 150 gm

How to prepare Mutton Biryani?

  1. Sauté ingredients 2-7 in ¾ cup vanaspathi and 6 dessert spoon ghee. Add salt, tomato, lemon juice, garam masala powder, mint leaves and coriander leaves as well. Saute it well.
  2. Add meat along with curd and cook it well.
  3. Fry some onions in vanaspathi to golden brown colour.
  4. Fry raisins and cashew in ghee and keep aside.
  5. Half cook rice using cumin seeds, cinnamon, cloves, cardamom and star anis pods.
  6. Spread this rice on top of cooked mutton. Sprinkle remaining leaves, pine apple, cashew nuts, raisins and fried onions on top. Pour remaining ghee and vanaspathi as well.
  7. Close the biryani vessel tightly with lid and seal suing maida flour.
  8. Bake it and use.
