Koon Varavittath (Mushroom Dry Fry)

Ingredients for Koon Varavittath (Mushroom Dry Fry):

1. Mushroom (Chippi Koon) – 1 Kg

    Salt – For taste

    Pepper powder – ¼ tsp

    Turmeric powder – ¼ tsp

2. Ginger – 1 small piece

    Garlic – 4 cloves

    Green chillies – 3

    Coconut oil – 1 big spoon

3. Onions finely chopped – 3

4. Chilli powder – 2 tsp

    Garam masala powder – ½ tsp

5. Coconut oil – For tempering

    Mustard – ½ tsp

    Red chillies – 1

    Curry leaves -1 stalk

    Cumin seeds – 1 pinch

    Shallots chopped – 1.5 cups

    Coconut scrapped – 2 cups

How to prepare Koon Varavittath (Mushroom Dry Fry)?

1. Cut mushrooms into small pieces and cook adding ingredients no: 1, sprinkling a little water.

2. Crush ingredients no: 2 and sauté in coconut oil.

3. When it turns brown, add onion and sauté till it turns soft.

4. Then add the powders – chilli powder and garam masala powder, and sauté again.

5. When a pleasant aroma comes out, add the cooked mushrooms to it, mix well and cook again with lid closed.

6. Heat a little more coconut oil and add ingredients 5.

7. When the ingredients are almost fried, add scrapped coconut and fry again.

8. When the mixture turns brown colour, add mushroom mixture to it.

9. Sauté again for 5 minutes till water content is fully absorbed and put the flame off.
